Raspberry and White Chocolate RollsBy Kristin and Alex- Two Peas in a PodRaspberry and white chocolate. What’s a better combination? Certain foods simply pair well with one another and this one stands the test of time. Raspberry jam and white chocolate chips wrapped around a delicate enriched dough and smothered in thick, creamy, cream cheese frosting. Yes please! This recipe was adapted from a cinnamon roll recipe made by Ambitious Kitchen. Every time I make the dough it comes out plump, light and tasty so sticking with the original dough recipe was easy. This recipe can be paired with any filling you prefer. I chose this one and it took quite few recipe trial and errors before I got it right. The raspberry jam works best when you put it cold directly on the dough in a thin layer. Too much jam and everything will come out when you try and roll the dough and cut it into rounds. I found this out the hard way and was disappointed when all my filling was left halfway hanging off the counter. Nevertheless we succeeded and this recipe won’t disappoint. Pair the roll with a cup of Joe or hot tea and enjoy!Cherry, Orange and Thyme SconesBy Kristin and Alex- Two Peas in a PodSpring has officially arrived in the desert of AZ and with it comes the bountiful harvest of citrus. Oranges, lemons, and grapefruit galore are everywhere on fruit trees and in the grocery stores. This scone recipe uses seasonal ingredients such as fresh oranges. I paired it with thyme and dried cherries to help bring out a savory and tart flavor to melt in your mouth. If the dried cherries are out of your budget, feel free to use dried cranberries as a more affordable option. Scones are probably one of my favorite baked goodie. You can add whatever your heart desires to the flour mixture and 9/10 it comes out delicious. They’re crispy on the outside and buttery on the inside. What’s not to love? These scones are tasty by themselves but they pair nicely with a hot breakfast such as bacon and eggs for additional protein. Puppies, Reese's Peanut Butter Cups, and pumpkin pie. Obviously. Thanksgiving is right around the corner and my family typically has about 8-10 pies for about 30 people. Needless to say, there's still never enough pie. I started making this pumpkin pie recipe a couple years ago. I follow the standard Libby's pie recipe but I like to add some additional spices to help kick it up a notch. The pie is also placed in a graham cracker crust which pairs well with the pumpkin pie mixture to give it a nice soft texture. This also helps get rid of the stressful and difficult task of making crust. I'm all about de-stressing right now and making simple, tasty, holiday recipes. It’s been a staple in our diet across cultures and at every meal. Bread provides a valuable source of carbohydrates for energy and fiber for digestive health. However, within the last couple of decades many people are giving up on this common food item due to mostly fad diets promoting low carb diets. If you were to tell me to give up bread I would laugh and say good day. I love bread, and all things made with flour. My bread of choice is a nice fresh slice of whole wheat bread. Nothing is worse to me than a bland slice of your generic white Wonder Bread down at the local grocery store. My philosophy is, I want to enjoy my food, eat what my body wants, and eat until I’m comfortably full. This whole wheat recipe checks all the boxes for a tasty, nutritious loaf that’s loaded with extra seeds, oats, and nuts. With 4 grams of fiber per slice you will leave feeling full, satisfied and content knowing that you don’t have to sacrifice your favorite foods to have a healthy, happy life. Bacon, Cheddar, and Chive SconesBy Kristin and Alex- Two Peas in a PodBack in my early twenties, I studied abroad in England at Cambridge University. Each day I would walk to class, stop by the local coffee shop, and order a small coffee with a pastry for breakfast. I honestly never grew up eating scones until I visited that lovely country. There's something soothing about listening to the rain outside falling down, sipping a hot cup of tea or coffee and eating a scone with butter and jam on the side. Pure bliss. Alex and I have been making this scone recipe for years. We've done it with just bacon and cheddar cheese, with bacon, cheddar, and green onion, and simply with cheddar and chive by itself. No matter what concoction you choose, you won't be disappointed with the outcome. Scones can be eaten as a light breakfast, cozy treat or as a delicious side to your fancy pants tea party with the girls. So get out your baking gloves and get started with this easy baked goodie!Spiced Cherry PieBy Kristin and Alex- Two Peas in a PodThe amount of time I've spent thinking about this pie before I actually decided to follow through and bake it to perfection is cumbersome. Even before quarantine we've managed to re-watch multiple seasons of The Great British Bake Off. The show is relaxing, it makes me hungry and seeing how genuinely kind British people are in a competition is astounding. Another benefit of the show is that it makes me think about potential recipe ideas and what I would do if I was there in the tent contemplating if I have the best flavor combinations or the stress of a "soggy bottom."
I created this recipe to give you the taste of fall with spices such as ginger, cinnamon and cloves. I cut back on the amount of sugar in the pie filling because I felt as if the spices help bring out the flavor of the cherries in a fresh and pleasurable way. I personally enjoy cooking with fresh ingredients vs. canned. This recipe will do well in the summer months between May to August when the fresh cherries are in season. You can choose to purchase pre-made pie crust for a faster and easier result or you can follow my pie crust recipe below. I understand the difficulty of making the perfect pie crust and this is an area I feel like I have to build up my skills.
