Raspberry and White Chocolate RollsBy Kristin and Alex- Two Peas in a PodRaspberry and white chocolate. What’s a better combination? Certain foods simply pair well with one another and this one stands the test of time. Raspberry jam and white chocolate chips wrapped around a delicate enriched dough and smothered in thick, creamy, cream cheese frosting. Yes please! This recipe was adapted from a cinnamon roll recipe made by Ambitious Kitchen. Every time I make the dough it comes out plump, light and tasty so sticking with the original dough recipe was easy. This recipe can be paired with any filling you prefer. I chose this one and it took quite few recipe trial and errors before I got it right. The raspberry jam works best when you put it cold directly on the dough in a thin layer. Too much jam and everything will come out when you try and roll the dough and cut it into rounds. I found this out the hard way and was disappointed when all my filling was left halfway hanging off the counter. Nevertheless we succeeded and this recipe won’t disappoint. Pair the roll with a cup of Joe or hot tea and enjoy!
Grandma’s Rocky RoadBy Kristin and Alex- Two Peas in a PodI'm pretty sure most people relate rocky road to rocky road ice cream. However, my family and myself all relate it to my grandma's annual rocky road candy. She makes a batch of this tasty sweet treat every holiday season. It's usually gone within a couple of days and I'm always eager for more. For years she simply had this recipe memorized. Recently she wrote it down for us in her beautiful cursive writing and I was shocked at how easy it was to make. Within 10 minutes your done with the prep/cook process and all you have to do is let it chill before you cut it into delicate little squares. This sweet treat is the perfect start to the holiday season. It's okay to indulge yourself every once in a while so get out your kitchen apron and start cookin' up a batch of this tasty rocky road!
Coffee Infused Dark Chocolate Cake With White Chocolate TrufflesBy Kristin and Alex- Two Peas in a PodWe baked this cake and completed it late Sunday night. Within two days it was gone! Yes my dad had one slice but Alex and I powered through it and trust me I'm not complaining. If you are a fan of chocolate, dark and white, then you will love this cake. It's infused with fresh brewed coffee in the batter and instant coffee in the frosting as well. Alex has made this cake multiple times for me in the past. For birthdays, PMS cravings, and random I love you days. It always soothes the soul and makes me feel happy. Cake is comforting and delightful. It's meat to be sweet but the bitterness of the dark chocolate and coffee help balance it out. Allow yourself a piece of this cake and you won't be regretting it later. This is a non-judgement zone and you're allowed to have your cake and eat it too. Enjoy!
Lemon Loaf Cake with Raspberry SwirlBy Kristin and Alex- Two Peas in a PodI know I'm a dietitian but I have to confess... In college my go to breakfast every morning was a Starbucks grande cinnamon dulce latte with soy milk, an extra shot of espresso and one lemon loaf cake. #whitegirl #ASU #sundevil4life Going to Starbucks was a ritual my father and I shared ever since middle school. Every morning, we would get in line, order our drinks, get a pastry and then he would drive me to school. Now that I'm married and based off society standards, an official adult, I realize how expensive certain things are and I genuinely believe I can prepare better coffee and tasty treats at home on my own. I have made this recipe multiple times in order to get it absolutely perfect. The raspberry swirl provides an additional burst of sweetness to your taste buds and trust me you won't be disappointed in the end. Nutrition Tip* Do you get sweet cravings? I know I do, especially after dinner or when I'm sad. This happens to many people and I wish I could say that there's an easy way to stop this from occurring. My main advice is to ask yourself, what do you truly want? Are you craving chocolate but you're trying to not eat the chocolate cake in the fridge so you eat a box of skittles instead? Then, after the skittles are you still craving chocolate so you cave and have an extra large slice of cake? We've all been there... Eat what your heart truly desires, be mindful of your portions, eat slow and enjoy your favorite food in that moment in time. The more we try to push out our cravings the stronger they can become. Maybe next time you'll eat one small piece of cake or 2 dark chocolate Hershey's kisses. Food is meant to be enjoyable. Break the cycle by being mindful of your choices and if you mess up move on and try it again. You and your cravings are not a lost cause.
Raspberry JamBy Kristin and Alex- Two Peas in a PodMaking jam has been around for centuries and something I personally have only recently started to try out. This raspberry jam recipe is so simple and uses basic ingredients with fresh raspberries, lime juice and sugar. There's no additional pectin required because the raspberries contain a natural form of pectin which helps solidify the jam. This recipe makes enough jam to fill 1 small 16 oz mason jar. It only lasts about one month but you can utilize it in many different ways. You can add 1 tsp of jam to plain Greek yogurt for a light snack, pair it with brie and crackers for a fancy appetizer, mix it with your favorite dessert such as my Lemon Loaf Cake with Raspberry Swirl for a delightful treat or naturally spread it on toast with butter.
